Easy Vegan Salted Caramel Sauce – 6 ingredients, dairy-free, paleo and vegan!
Okay you guys – this Easy Vegan Salted Caramel Sauce is everything caramel sauce should be – it is sweet and creamy is perfect for dipping and drizzling!
For those of you who are vegan or diary-free (like me), caramel sauce is something that has always been completely off-limits. I can’t believe it has taken me this long to come up with this!!! I can finally enjoy caramel apples again ….. oh how I have missed them! It took a while to get the consistency right, but it is finally perfect and I am so excited to share it with you guys! This was the most-fun photo shoot I have had in a while……
(as always, so thankful for my patient husband for dipping that slice of apple like 50 times…..)
I found out I was allergic to dairy in high school (apparently you can have too much dairy and then your body start rejecting it….) I haven’t had a glass of milk since and while I used to eat minimal cheese, I have now cut it out almost completely, except for the rare Friday pizza night because….. well you just have to sometimes! Other than those sporadic pizza nights, I stopped consuming dairy after my first Whole30 in May of this year. I have the oddest reaction to it – I get incredibly sleepy along with some headaches and the occasional hive. I have never heard of anyone else having a similar reaction so if you are out there – let me know!! Needless to say, cutting it completely out of my diet has been amazing – I feel so much more energetic. Both my mom and Mike have done Whole30 as well and both also made the decision to cut dairy out of their diets afterwards. They both complained of stomach aches and bloating when they ate it afterwards. Again, I found I can eat cheese once in a while, but too much or too often and I can completely tell the difference. That is honestly one of the things I love most and that is the most interesting part of doing a Whole30 – you really get to know what your body can and can’t handle. If any of you guys have any questions about Whole30 – please let me know!
But that is a major reason I love making vegan desserts – there is dairy in basically every good dessert…. it is fun coming up with different ways to try and reach the same flavor and deliciousness of some of everybody’s favorite dessert – but vegan (like these Vegan Stuffed Apples).
On a side-note (and kind of related note) – – I am totally doing a Whole30 reset this week. My last Whole30 was in July and I can feel myself slipping back into some bad habits. Plan is to do a reset this week and I am also planning on doing my third Whole30 in January! If any of you want to do it with me – you can start planning now!!
And definitely check out my next post – I am using this caramel sauce in my next recipe and it is soooooo good and so beautiful!! I can’t wait to share!!
Have a great week you guys!
