Watermelon + Feta Salad with Mint – the PERFECT summer salad! So easy to put together, light and refreshing!

As in, you can literally see all of the ingredients in the photo and you really don’t even need me to walk you through the recipe. That’s how easy.
I love this salad for its simplicity – and for how perfect it is in the summer. I know I am not the only one that doesn’t feel like doing anything too crazy when it is 90 degrees out. When it is THAT hot, you want something you can throw together in a pinch, with minimal ingredients, but that still tastes like you put a lot of thought into it – boom – this salad is what you need in that exact moment (or maybe this one).
I know, I know, it may look kind of fancy in the photo….. all cut perfectly (except for that top right corner, which is all I can focus on in the picture. My official party line is that I meant for it to be like that. The artist in mean wanted it to be perfectly imperfect 😉). Anyway, don’t be scerrrd. It doesn’t need to look like this, unless you are having a dinner party, in which case DO IT, cause it looks awesome. Otherwise, totally ignore my photo and just cut up some watermelon and feta cheese and throw them in a bowl with some olive oil, salt and mint leaves.
So, the next time you are in a pinch to bring a salad to a cookout, this be it! Super easy, delicious and not your typical cut up watermelon — and to answer your question, YES, watermelon and feta taste surprisingly amazing together 😊
Oh and a quick note about the recipe – you will see that I don’t lay out specific amounts of …. well anything. This is really one of those recipes that you get to take control. (yay for you!). Use as much or as little watermelon and feta as you want, really. Depends upon how many people you are feeding. Add enough olive oil to gently coat, sprinkle with salt and then add as much or as little fresh mint leaves as you deem appropriate! Serve cold. It really is that easy!!

- Feta cheese
- Fresh Mint Leaves
- Olive oil
- Option #1: ensuring the ratio of watermelon to feta cheese is 50/50, cut up as much as is required. Add some mint leaves, a pinch of salt and toss in a light amount of olive oil.
- Option #2: cut cubes of feta cheese and watermelon (2 of each) and layer on plate. Sprinkle with salt and garnish with fresh mint leaves. Pour a small amount of olive oil over top right before serving.
