Description

These easy Baked Eggs can be made three different ways and are a versatile breakfast that everyone will love! 


Ingredients

Herby Goat Cheese Baked Eggs:

  • 1 teaspoon ghee or butter
  • 1 egg
  • 1 tablespoon coconut milk
  • 2 tablespoons soft goat cheese
  • 12 tablespoons fresh chives, chopped

Whole30 Baked Eggs:

  • 1 teaspoon ghee
  • 1 egg
  • 1 tablespoon coconut milk
  • 1/41/2 cup compliant ground sausage
  • 1/4 cup russet potato, chopped
  • 34 pieces spinach
  • (optional) – compliant prosciutto

Extra Spicy Baked Eggs:

  • 1 teaspoon ghee or butter
  • 1 egg
  • 1 tablespoon coconut milk
  • 1/4 cup cherry tomatoes, halved and remove seeds
  • 23 slices of jalapeño
  • hot sauce

Instructions

  1. Preheat oven to 375 degrees F.
  2. Place a teaspoon ghee in each ramekin. Put ramekins on a cookie sheet and place in oven for 3 minutes.
  3. Carefully add desired ingredients in each ramekin, leaving a little hole in the middle.
  4. If you are making the Whole30 version, cook sausage and potatoes in a small saucepan with a little olive oil and place 2-3 pieces of prosciutto around the edge of the ramekin.
  5. Crack egg in the hole in the middle of each ramekin. Spoon coconut milk over top for extra creaminess.
  6. Place in oven for 7-10 minutes.
  7. Then set the oven to broil and cook for an additional 1-2 minutes. Whites should be set and yolk should be soft or runny.
  8. Let set 3-5 minutes.

Notes

  • Storage: feel free to meal prep these ahead of time and store covered in the refrigerator for up to 5 days.
