Herbed Butter Boiled Potatoes

Description

Utterly delicious and easy Herbed Butter Boiled Potatoes are the perfect side dish that everyone loves! Packed with flavor and so quick!


Ingredients

Scale
  • 1 1/2 pounds baby red potatoes, halved or quartered (depending upon size)
  • 4 tablespoons butter
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon kosher salt, more to taste
  • 1/4 teaspoon ground black pepper
  • 23 tablespoons fresh rosemary, minced
  • 23 tablespoons fresh thyme, minced
  • 1 tablespoon Italian seasoning

Instructions

  1. Bring large pot of salted water to boil.
  2. Add potatoes and let simmer approx. 10 minutes or until potatoes are soft, but firm. 
  3. Drain potatoes and return to the same pot (but remove from heat). 
  4. Add butter, olive oil, kosher salt, ground black pepper, rosemary, thyme and Italian seasoning. Toss to coat. 
  5. Taste and add additional salt or Italian seasoning for additional flavor. Add additional olive oil or butter if you feel they are dry. 
  6. Serve immediately and enjoy! 

Notes

  • Dairy-Free: you can sub in a dairy-free butter here to make it dairy-free.
