Description

Our Chocolate Chip Baked Oatmeal Cups recipe is made with simple, real ingredients and are going to be your new favorite!

Ingredients

Scale

Wet Ingredients:

  • 2 ripe bananas, peeled
  • 1/4 cup creamy peanut butter (or almond butter)
  • 1/4 cup unsweetened almond milk
  • 2 teaspoons pure maple syrup
  • 1/3 cup unsweetened applesauce
  • 1/2 teaspoon vanilla extract

Dry Ingredients

  • 2 1/2 cups rolled oats
  • 1/2 teaspoon kosher salt
  • 1 tablespoons ground flax meal
  • 1 tablespoon chia seeds
  • 1 teaspoon baking powder
  • 1/2 cup dairy-free chocolate chips

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, add banana and mash with a fork. Add remaining Wet Ingredients and mix to combine.
  3. In a medium mixing bowl, combine Dry Ingredients; stir to combine.
  4. Pour dry ingredients into the wet ingredients and stir.
  5. Spray a muffin tin with your choice of nonstick spray to prevent sticking.
  6. Scoop approximately 3 tablespoons of the oatmeal mixture into each muffin tin (it’s okay to fill to the top, they don’t rise).
  7. Place in preheated oven on the middle rack and bake for 18 minutes.
  8. Remove and let cool at room temperature, about 10 minutes.
  9. Use a small spatula or butter knife to loosen outer edges before removing.

Notes

  • Does it rise: these did not rise at all so you can fill your muffin tins to the top.
  • Muffin Pan: option to use these silicone muffin holders, if you want!
  • Let Cool: Be sure you let them cool before trying to get them out of the muffin tin!
  • Storage:  These don’t have any preservatives in them, so make sure you store them in an airtight container in the refrigerator for up to 5-6 days. Feel free to re-heat before serving!
