Description

Sautéed Zucchini Recipe – a simple side dish that goes perfectly with any meal! A healthy, quick and easy side dish!


Ingredients

Scale
  • 12 small zucchini, cut into 1/2 inch slices and then in half
  • 2 tablespoons ghee
  • kosher salt & ground black pepper

Instructions

  1. Bring a large cast iron skillet to medium-high heat.
  2. Add 1 tablespoon of ghee and swirl to coat the pan.
  3. Toss in the zucchini and season with salt and pepper.
  4. Cook for 2-3 minutes, continuing to move around, or until zucchini is heated through, but still firm.
  5. Taste along the way to ensure you don’t overcook and for seasoning.
  6. Add additional salt and pepper, as desired and additional ghee if pan gets too dry.
  7. Remove from heat and serve immediately.

Notes

  • Zucchini: using a smaller zucchini is recommended as they tend to get less mushy as they cook.
  • Storage: we highly recommend enjoying this sautéed zucchini right away, it tends to get pretty mushy in the reheating process.
