Description

Fajita Veggies – a flavorful and delicious Fajita Veggie recipe that is perfect for any fajita recipe! Made with simple, real ingredients!


Ingredients

  • 12 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • 1/2 red onion, sliced
  • 1/2 yellow onion, sliced
  • 3 bell peppers (red, green, orange), sliced
  • 2 tablespoons fajita seasoning
  • additional salt and ground black pepper, to taste

Instructions

  1. Bring large cast-iron skillet to medium high heat.  Add oil, swirl to coat the pan.
  2. Add garlic and move around pan until it becomes fragrant, approx. 1 minute.
  3. Add onion, bell peppers and the fajita seasoning. Stir to combine.  Add additional olive oil to pan if you feel it is getting a bit dry. 
  4. Sauté for approx. 10-15 minutes or until the peppers have reached your desired doneness (cook shorter for a more firm, but tender pepper – longer for a softer pepper). 
  5. Taste and add any additional salt or pepper, to taste.
  6. Remove from heat and use in your favorite fajita recipe – we love these Chili Lime Steak Fajitas or Steak Fajita Bowls!

Notes

  • Onion: feel to use either red OR yellow onion, I like using both for more depth of flavor.
  • Bell Pepper: you can use any color of bell pepper you want.
  • Fajita Seasoning: we love using our homemade fajita seasoning, but store-bought works too. 
  • Storage: place them in an airtight container and store in the fridge for up to 4-5 days.
