Description

Healthy Pumpkin Pie Energy Balls – a healthy delicious snack that is easy to make and used simple, clean ingredients!


Ingredients

Scale
  • 78 medjool dates, pitted
  • 1/2 cup organic pumpkin puree
  • 1 Tablespoons almond butter
  • 1/2 cup raw cashews
  • 3 Teaspoons pumpkin pie spice
  • 3 Tablespoons ground flaxseed
  • Optional – toppings:
  • crushed graham cracker (Note: if you use graham crackers, it will no longer be paleo/gluten-free)
  • shredded coconut
  • cocoa powder

Instructions

  1. Combine ingredients in food process and run until thoroughly combined.
  2. If too thick, add additional pumpkin puree, 1 Tablespoon at a time.
  3. Once it has reached the right consistency (don’t worry if it is sticky), roll into balls (about 1 – 1 1/2 Tablespoons.
  4. Place in a container and put in the freezer for 15 minutes.
  5. Remove and roll between hands again to solidify the ball.
  6. If still sticky, place back in the freezer for an additional 10-15 minutes.
  7. Roll again between hands and then keep in airtight container in the refrigerator.
  8. If you want, feel free to roll in a topping.
