- 1–2 delicata squash
- sharp chef’s knife
- cutting board
Instructions
- Select: Pick out a ripe delicata squash and place on a cutting board.
- Cut: Use a large, sharp knife to cut both ends off the squash. Cut the squash in half, length-wise.
- Scoop: Use a spoon to scoop out all of the seeds and strings from the inside of the squash. Place half of the squash on the cutting board with the rind side up and cut it into 1/4 – 1/2 inch slices moving down the squash.
- Finish: Complete these steps for all of the squash that you are making. Enjoy any way you want!
Notes
- Skin: no need to peel this squash, you can eat it with the rind on.
- Serving: this is a great side dish for any meal but we love serving it with Cast Iron Pork Chops, Grilled Chicken Thighs, or we add it to a simple sheet pan meal like our Sausage Sheet Pan Dinner!
