Maple Bacon Brussel Sprouts

Description

A maple bacon brussel sprout recipe that is the perfect side dish for any meal! Made with real, simple ingredients and packed with flavor!


Ingredients

  • 1 1/2 pounds brussel sprouts, halved
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • 6 slices thick cut bacon, cut into bite-sized pieces
  • 2 teaspoons garlic, minced
  • 1/2 teaspoon lemon zest
  • 12 tablespoons maple syrup

Instructions

  1. Prep the brussel sprouts by remove the end, removing the outer layer and then halving each one. Place them in a bowl. Drizzle with olive oil and season with kosher salt and ground black pepper. Massage oil into brussel sprouts. Prep the bacon by cutting it into bite-sized pieces. 
  2. Bring a large cast iron skillet to medium-high heat. Add bacon and move around pan until it is fully cooked and the fat has rendered. Remove bacon pieces with slotted spoon and place on a paper-towel lined plate. Set aside. 
  3. Leave 2-3 tablespoons of rendered bacon fat in the pan, discard the rest. 
  4. Ensure cast iron skillet is at medium-high heat. Add brussel sprouts. Move around and let them crisp up a bit, approx. 8 minutes. Add in garlic and lemon zest – toss to combine. Let cook another 1-2 minutes. 
  5. Drizzle with maple syrup (start with 1 tablespoon) and add cooked bacon pieces back in. Toss to combine and then taste. Add additional maple syrup (or kosher salt), as desired.
  6. Serve immediately and enjoy!

Notes

  • Brussel Sprouts: try and use brussel sprouts that aren’t too big – I find those are the ones that tend to get mushy and/or just don’t cook up as well!
  • Lemon Zest: we don’t need much here, just a bit to round out the flavors with a bit of acidity!
  • Storage: store leftovers in an airtight container in the refrigerator for up to 3-4 days.
