Description

Pancake Bites – an easy, delicious pancake bite recipe made with real, simple ingredients and your kids will love them! The perfect addition to any breakfast or brunch menu!


Ingredients

Scale
  • 2 large ripe bananas
  • 2 large eggs
  • 1 1/3 cup rolled oats
  • 1/2 cup unsweetened almond milk
  • 2 tablespoons real maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • 2 1/4 teaspoon baking powder
  • Toppings: mini chocolate chips, small blueberries or strawberries, chopped
  • Serving: additional real maple syrup

Instructions

  1. Preheat oven to 415 degrees F. Spray mini muffin tin with olive oil or your favorite non-stick spray.
  2. Add bananas, eggs, oats, almond milk, maple syrup, vanilla extract, salt, cinnamon and baking powder to a high-speed blender. Blend until smooth. Pour into greased mini muffin tins filling about 3/4 full. 
  3. Top with mini chocolate chips, small blueberries or chopped strawberries. 
  4. Place in oven, middle rack, and let bake 8-10 minutes or until they start to brown a bit around the edges. 
  5. Remove from oven and let cool slightly. Use a butter knife to help pop them out. 
  6. Serve with additional real maple syrup and enjoy!
