Description

Pumpkin Overnight Oats – perfect for Fall this easy, make-ahead breakfast is easy and delicious!!!


Ingredients

Scale
  • 1 medium banana, mashed
  • 1 1/2 teaspoon vanilla extract
  • 1/2 cup unsweetened almond milk
  • 1/4 cup +3 tablespoons pumpkin puree
  • 1 tablespoon maple syrup
  • 1 tablespoon chia seeds
  • 1 cup rolled oats
  • 2 1/2 teaspoons pumpkin pie spice
  • 1/4 cup dairy-free chocolate chips (optional)
  • pinch of salt

Instructions

  1. Place banana in medium bowl and smash with fork until smooth.
  2. Add vanilla extract, maple syrup, unsweetened almond milk and pumpkin puree.
  3. Stir until smooth.
  4. Add oats, chia seeds, pumpkin pie spice and salt; stir to combine.
  5. Stir in chocolate chips.
  6. Pour into covered storage container and place in fridge.
  7. Let sit for anywhere from 30 minutes to overnight.

Notes

  • Protein Powder: Feel free to add in a little protein powder (plant-based or otherwise) if you want!
  • Topping: If you want you can top with some dairy-free whipped coconut cream or almond milk!
  • Gluten-Free: Feel free to use certified gluten-free oats to make it gluten-free.
  • Other Dairy-Free Milk: Any dairy-free milk will work in this recipe.
