Baked Apples Recipe + Cardamom Whipped Cream - an indulgent, delicious Fall recipe that is perfect this apple season!
Ingredients
¾cupbrown sugar
½cuprolled oats
½cupall-purpose floursub 1-to-1 gluten free flour
1teaspoonground cinnamon
1teaspoonground nutmeg
⅓cupbuttermelted
4honey crisp applescored
Cardamom Whipped Cream:
1cupheavy whipping cream
4teaspoonsgranulated sugar
½teaspoonground cardamom
Toppings:
walnutschopped (sub pecans)
vanilla bean ice cream
caramel sauce
Instructions
Prep: Preheat oven to 350℉.
Stuff Apples: Combine ¾ cup brown sugar, ½ cup rolled oats, ½ cup all-purpose flour, 1 teaspoon ground cinnamon and 1 teaspoon ground nutmeg in a medium bowl. Stir to ensure all clumps are gone and everything is thoroughly mixed. Add melted butter and mix with spoon until clumpy. Stuff mixture into cored apples, packing tightly and making sure there almost a little "cap" on top of the apple.
Bake: Place in the preheated oven for 35-45 minutes. Obviously, the longer you cook them, the softer they will get so adjust cook time per your desired softness. It will also depend upon the size of your apples.
Make Whipped Cream: While the apples are cooking you can make your whipped cream (or you can make it the day before). Add 1 cup heavy whipping cream, 4 teaspoons granulated sugar and ½ teaspoon ground cardamom to mixing bowl and mix on med/high with a stand mixer or hand mixer until cream becomes thick and will stand up on its own when you pull out your mixer (approx. 3 minutes or so).
Adjust: Taste the whipped cream and add additional sugar and/or cardamom to reach your desired taste - remember that cardamom is very strong, so if you are going to add more, I would start with ¼ teaspoon and go from there.
Serve: Place a stuffed apple in a bowl; top with Cardamom Whipped Cream; Put scoop of vanilla bean ice cream next to it. Sprinkle with about 1-2 tablespoons of walnuts; Drizzle with caramel. Enjoy!
Notes
Dairy-Free: use dairy-free butter, dairy-free vanilla ice cream and dairy-free whipped cream (or just grab some store-bought dairy-free whipped cream).
Gluten-Free: simply use gluten-free oats and and gluten-free flour.
Storage: these are best made right before serving.
