1tablespoonolive oil
½teaspoonkosher salt
⅛teaspoonground black pepper
6slicesthick cut baconcut into bite-sized pieces
2teaspoonsgarlicminced
½teaspoonlemon zest
1-2tablespoonsmaple syrup
Instructions
Prep Brussel Sprouts: Cut off the end and remove the outer layer of each brussel sprout. Then cut them in half and place them in a bowl. Drizzle with 1 tablespoon olive oil and season with ½ teaspoon kosher salt and ⅛ teaspoon ground black pepper. Massage oil into brussel sprouts.
Cook Bacon: Bring a large cast iron skillet to medium-high heat. Add bacon pieces and move around pan until it is fully cooked and the fat has rendered. Remove bacon pieces with slotted spoon and place on a paper-towel lined plate. Set aside. Leave 2-3 tablespoons of rendered bacon fat in the pan, discard the rest.
Combine + Cook: Ensure cast iron skillet is at medium-high heat. Add brussel sprouts. Move around and let them crisp up a bit, approx. 8 minutes. Add in 2 teaspoons garlic and ½ teaspoon lemon zest - toss to combine. Let cook another 1-2 minutes. Drizzle with 1-2 tablespoons maple syrup (start with 1 tablespoon) and add cooked bacon pieces back in. Toss to combine and then taste. Add additional maple syrup (or kosher salt), as desired.
Serve: Enjoy right away!
Notes
Brussel Sprouts: try and use brussel sprouts that aren't too big - I find those are the ones that tend to get mushy and/or just don't cook up as well!
Lemon Zest: we don't need much here, just a bit to round out the flavors with a bit of acidity!
Storage: store leftovers in an airtight container in the refrigerator for up to 3-4 days.
