A beautiful way to use your homemade Ghee and perfect for Easter brunch!
Ingredients
2½cupsall-purpose flour
¼cupgranulated sugar
1½tablespoonsbaking powder
¼cupcold ghee
1cupcold almond milksub cow's milk
1tablespooncold unsweetened applesauce
Instructions
Prep: Preheat oven to 400℉. Grease 12 cup muffin tray.
Dry Ingredients: Combine 2½ cups all-purpose flour, ¼ cup granulated sugar and 1½ tablespoons baking powder (preferably sifting the ingredients first) into your stand mixer bowl.
Add Ghee + Wet Ingredients: As mixer is on med, slowly add ¼ cup cold ghee until it resembled course crumbles. Add 1 cup cold almond milk and 1 tablespoon cold unsweetened applesauce.
Bake: Once completely mixed, spoon into muffin cups. Bake for 20-25 minutes, ensuring the tops are golden brown. Let cool in muffin tins and then remove.
Serve: Enjoy warm with additional ghee (or butter) and grape preserve (or really any jam or jelly you desire).
