Our flavor-packed Sausage and Rice recipe is a quick and easy dinner that is perfect for those busy weeknights!
Ingredients
1tablespoonextra virgin olive oil
12ozpackage of Andouille sausagecut into 1/2 inch slices
1tablespoongarlicminced
1small yellow oniondiced
1green bell peppercut into large chunks
1red bell peppercut into large chunks
1jalapeñoremove seeds/membranes and diced
2celery stalkssliced
1/4teaspoonkosher salt
1/4teaspoonground black pepper
1/2 - 1teaspoonCreole seasoning
1/2teaspoononion powder
1/2teaspoongarlic powder
114oz can of diced tomatoes, undrained
2 1/2cupschicken broth
1cuplong grain white riceuncooked
optional: 1/2 cup frozen sliced okra
Instructions
Sear Sausage: Bring a large cast iron skillet to a medium-high heat and add oil to coat the bottom of the pan. Add sausage slices to the hot pan and move around to sear for 1-2 minutes. Remove sausage from the pan and set aside.
Sauté: Keeping the large skillet at a medium high heat, add garlic and move around until fragrant; about 30 seconds. Now add onion, bell peppers, jalapeño, celery, salt and pepper. Move around the pan until softened; approximately 2-3 minutes.
Season & Simmer: Add Creole seasoning, onion powder, garlic powder, diced tomatoes, chicken broth, and rice. Stir to combine. Bring to a simmer. Cover and let cook 15-20 minutes or until rice is fully cooked. Stir occasionally while the rice cooks and add a splash or two of broth if the pan gets dry.
Warm: Add the seared sausage back to the skillet & the frozen okra, if using. Stir to combine and keep on a low heat until warmed throughout.
Serve: Enjoy immediately!
Notes
Smoked Sausage: option to use smoked sausage in this recipe for that extra smokey flavor. Simply place the entire sausage directly on the grates of a smoker at 225 degrees F for 1.5 - 2 hours. Cut into slices and use as directed in this recipe.
Sausage: highly recommend using Andouille sausage if you like a little added kick, but any other variety of sausage would work here too!
Leftovers: this recipe is perfect for meal prep and makes great leftovers. Just store in an airtight container in the fridge for up to 5 days! Reheat in the microwave.
