- 2–3 teaspoons olive oil or butter
- 2 large eggs
- kosher salt and fresh cracked pepper
Instructions
- Prep Skillet: Bring a large skillet to medium-high heat. Add butter (or oil) to pan and let melt.
- Cook Eggs: Crack both eggs next to each other on top of the melted butter. Let cook 30 seconds and then turn heat down to medium. Continue cooking on medium heat for 1 minute, turn down heat to medium-low and let eggs cook for 45-60 seconds. Use a spatula to carefully separate the two eggs if their egg whites have cooked together.
- Flip: Use the same spatula to carefully flip each egg. Let eggs cook approx. 30 seconds (this will just help finish cooking the tops of the egg whites). And then flip them onto a plate.
- Serve: Top with kosher salt and fresh cracked pepper and serve immediately.
