Acorn Squash Soup

Prep acorn squash  for roasting

Place squash on a baking sheet and roast at 400 degrees F

Sauté minced shallots

Add roasted squash flesh, coconut milk, & vegetable broth

Use an immersion blender to combine

Add maple syrup, pinch of salt, & ghee

Stir to combine

Enjoy with pepitas for some crunch
