Smoked Prime Rib

Pat your prime rib dry, season it with salt and pepper, and let it come to room temperature

Assemble the herbed butter

Generously spread the herbed butter all over the prime rib

Place the prepped prime rib in your smoker and check the internal temp intermittently

Remove the prime rib from the smoker when internal temperature reaches between 118°F - 120°F

Give your prime rib a quick sear on both sides or until internal temp is about 125/128 degrees F.

Let rest 15 mins (internal temp will continue to rise up to 130/135 degrees F) & enjoy!
