Avocado Toast with Egg - a fun spin on the beloved avocado toast recipe! A simple, easy recipe that is perfect for breakfast!
Ingredients
1roma tomatodiced
kosher salt
1slicesourdough breadtoasted, if desired
½avocadomashed, sliced, or rose
1eggpoached
red pepper flakes
Instructions
Prep: Preheat oven to 350℉.
Roast Tomato: Place diced tomato on a cookie sheet and sprinkle with a little kosher salt. Roast for 5-7 minutes, checking periodically and stirring about halfway through. They should start to char just a little and then they are ready to come out.
Layer: Take 1 slice sourdough bread (toasted, if you want) and add ½ avocado, roasted tomatoes and poached egg on top.
Serve: Sprinkle with a little salt and your desired amount of red pepper flakes. Enjoy immediately!
