Our Chocolate Chip Baked Oatmeal Cups recipe is made with simple, real ingredients and are going to be your new favorite!
Ingredients
2ripe bananaspeeled
⅓cupunsweetened applesauce
¼cupcreamy peanut butteror almond butter
¼cupunsweetened almond milk
2teaspoonspure maple syrup
½teaspoonvanilla extract
2 ½cupsrolled oats
½cupdairy-free chocolate chips
1tablespoonground flax meal
1tablespoonchia seeds
1teaspoonbaking powder
½teaspoonkosher salt
Instructions
Prep: Preheat oven to 350℉. Spray a muffin tin with your choice of nonstick spray to prevent sticking.
Wet Ingredients: In a large bowl, add 2 ripe bananas and mash with a fork. Add ⅓ cup unsweetened applesauce, ¼ cup creamy peanut butter, ¼ cup unsweetened almond milk, 2 teaspoons pure maple syrup, and ½ teaspoon vanilla extract. Mix to combine.
Dry Ingredients: In a separate bowl, add 2 ½ cups rolled oats, ½ cup dairy-free chocolate chips, 1 tablespoon ground flax meal, 1 tablespoon chia seeds, 1 teaspoon baking powder, and ½ teaspoon kosher salt. Mix to combine.
Combine: Pour dry ingredients into the wet ingredients and stir to combine.
Bake: Scoop approximately 3 tablespoons of the oatmeal mixture into each muffin tin (it's okay to fill to the top, they don't rise). Place in preheated oven on the middle rack and bake for 18 minutes.
Cool + Serve: Remove and let cool at room temperature, about 10 minutes. Use a small spatula or butter knife to loosen outer edges before removing.

Does it rise: these did not rise at all so you can fill your muffin tins to the top.
Let Cool: Be sure you let them cool before trying to get them out of the muffin tin!
Storage: These don't have any preservatives in them, so make sure you store them in an airtight container in the refrigerator for up to 5-6 days. Feel free to re-heat before serving!
