BBQ Chicken: Combine 1 pound cooked shredded chicken and 1 cup barbecue sauce; stir to combine and set aside.
Cheese Mixture: In large mixing bowl combine 16 ounces cream cheese, ½ cup ranch dressing, ½ cup sour cream, ½ cup fresh cilantro leaves, 2-3 teaspoons hot sauce (if using), ½ cup sharp cheddar, ½ cup mozzarella cheese and ½ cup parmesan cheese.
Layer: Pour cream cheese mixture into a large skillet and spread out evenly. Then layer diced bell pepper, red onion, ½ cup corn kernels and bbq chicken on top of the cream cheese mixture. Top with the remaining cheese.
Bake: Place in oven for 20-30 minutes, or until cheese is melted and bubbly.
Serve: Add additional cilantro, red onion or barbecue sauce on top before serving, as desired. Enjoy with warm bread, crackers or chips.
