Our light and refreshing Brussel Sprout Saladrecipe is the perfect side dish for your next holiday, family gathering, or any other special occasion!
Ingredients
Citrus Champagne Vinaigrette:
1/4cupchampagne vinegar
1/2cupextra virgin olive oil
1teaspoondijon mustard
2tablespoonssweet yellow onionminced
2teaspoonslemon zest
2teaspoonslemon juice
2teaspoonsorange zest
2teaspoonsorange juice concentrate
2teaspoonsgarlicminced
1teaspoonfresh thyme
1/2teaspoonkosher salt
1/8ground black pepper
1teaspoonhoney
Salad:
1poundfresh brussel sproutsshaved (about 4 cups)
1/2cupparmesan cheeseshaved
1/2cupdried cranberries
4slicesof cooked baconchopped
1/4cuppepitas
2honey crisp appleschopped
1/3cuppomegranate seeds
Instructions
Dressing: put all the dressing ingredients in a small food processor or blender and blend on high until fully combined.
Build Salad: put all the salad ingredients in a large bowl and mix to combine.
Toss with Dressing: pour the dressing over the top of the salad and toss to coat. Taste and make any adjustments, as needed.
Serve: enjoy immediately!
Notes
Shaved Brussel Sprouts: Buy pre-shaved brussel sprouts or use a mandoline or the slicing attachment to your food processor.
Salad Ingredients: feel free to adjust any of the salad ingredients according to your own personal preferences.
Make Ahead: this is a great salad to prep ahead of time - just cut the apples right before serving so they don't turn brown and don't add any dressing before serving (or things will get soggy).
Dairy Free: omit the parmesan cheese or swap with a dairy-free alternative.
