Ingredients
3/4cupcarrotspeeled & grated
1/2cupextra virgin olive oil
3tablespoonsrice vinegar
2tablespoonssoy sauce
1tablespoongingergrated
1tablespoonshallotsgrated (more, if desired)
3teaspoonscoconut sugar
1/4teaspoonkosher salt
Instructions
Blend: Put all of the ingredients in a small food processor or blender. Blend on high until fully combined and smooth.
