Carrot Ginger Smoothie - a plant-based, dairy-free smoothie that is packed with amazing and healthy ingredients!
Ingredients
1large carrotpeeled and roughly chopped into chunks
¼ -½cupwater
1teaspoonfresh gingerpeeled and finely chopped
1frozen banana
2-3slicescanned peaches
1cupdairy-free vanilla yogurt
1tablespoonground flaxmeal
½ - ¾tablespoonhoney
⅛teaspoonground cinnamon
Instructions
Blend Carrot: Add carrot chunks and ¼ -½ cup water to blender(start with ¼ cup water and add more later, if needed to thin). Blend until carrot has turned into a puree (may need a minute or two).
Add Remaining Ingredients: Add 1 teaspoon fresh ginger and blend for another minute until smooth. Add 1 frozen banana, 2-3 slices canned peaches, 1 cup dairy-free vanilla yogurt, 1 tablespoon ground flaxmeal, ½ - ¾ tablespoon honey, and ⅛ teaspoon ground cinnamon blend on high for 1-2 minutes.
Adjust: Taste and add any additional ingredients to reach desired taste and consistency (see notes for tips).
Serve: Garnish with a sprinkling of cinnamon and enjoy!
Notes
Consistency: if too thick, feel free to add a splash of almond milk; not sweet enough add some more honey; want it thicker add another frozen banana or a handful of ice cubes.
Add-Ins: in addition or in place of the flaxmeal noted in the recipe card you could add a scoop of protein powder, collagen, etc.
