Our Cherry Chocolate Chunk Cookie Bars recipe is a delicious dessert made with wholesome ingredients and LOTS of cherries!
Ingredients
1cupunsalted butter
½cupcoconut butter
4¼cupswhole wheat flour
1teaspoonkosher salt
1teaspoonbaking soda
½teaspoonfinely ground coffee
1¼cupcoconut sugar
¼cuphoney
2eggs
1egg white
2teaspoonsvanilla extract
1-2tablespoonswateras needed
1-2cupschocolate chunks
1cupdried cherries
sea salt
Instructions
Prep: Preheat oven to 350℉.
Melt Butters: Bring a small skillet to a medium heat, melt 1 cup unsalted butter and let simmer until it turns brown and gives off slightly nutty smell. Pour browned butter into a glass container and add ½ cup coconut butter to allow it to melt. Place container in refrigerator to cool slightly.
Dry Ingredients: In a medium bowl, combine 4¼ cups whole wheat flour, 1 teaspoon kosher salt, 1 teaspoon baking soda and ½ teaspoon finely ground coffee; mix well.
Combine: Remove brown butter mixture from fridge and pour into the mixing bowl of a stand mixer. Add 1¼ cup coconut sugar, ¼ cup honey, 2 eggs, 1 egg white and 2 teaspoons vanilla extract. Mix thoroughly with paddle attachment. Slowly add dry ingredient mixture. Add 1-2 tablespoons water as needed to ensure mixture remains wet and you can mix everything together.
Chocolate + Cherries: Fold in 1-2 cups chocolate chunks and 1 cup dried cherries.
Bake: Place a piece of parchment paper in a 9x13 baking pan and spray with non-stick cooking spray. Bake for 20-25 minutes.
Serve: Let cool, cut and enjoy!
Notes
Storage: keep leftover cookie bars in an airtight container on the counter top for 3-4 days.
