Easy Black Bean and Avocado Wrap - a delicious, quick and easy lunch option that is dairy-free and plant-based!
Ingredients
1whole grain tortillaburrito-size
½cupblack beansdrained
½avocadocubed
2tablespoonscorn kernels
2tablespoonsfresh cilantroroughly chopped
1tablespoonred oniondiced
Sauce:
½cupfull fat coconut milk
2tablespoonsnutritional yeast
pinchkosher salt
1tablespoonunsweetened almond milkif needed to thin out (add more, if needed)
Instructions
Make Sauce: In a small bowl, add ½ cup full fat coconut milk, 2 tablespoons nutritional yeast, a pinch kosher salt, and 1 tablespoon unsweetened almond milk (if needed).
Fill Wrap: Place 1 whole grain tortilla on a plate. Add black beans, avocado, 2 tablespoons corn kernels, 2 tablespoons fresh cilantro and 1 tablespoon red onion.
Serve: Drizzle with the sauce. Wrap it up and enjoy!
