This Easy Vegan Breakfast Burrito is so easy to make and absolutely delicious!
Ingredients
Creamy Siracha Sauce:
1/4cupsiracha sauce
2tablespoonsCalifia Unsweetened Almondmilk
Tofu Scramble:
1 14ozpackage extra firm tofu
1tablespoonolive or avocado oil
1-2teaspoonsgarlicminced
1small yellow oniondiced
1/2 - 1teaspoonkosher salt
1/4teaspoonground black pepper
1-2teaspoonsground turmeric
Other Burrito Ingredients:
1 15ozcan black beansdrained
1avocadosliced
1cupfresh spinach
4large burrito tortillasor about 6-8 regular sized ones
Instructions
Creamy Siracha Sauce
Combine Creamy Siracha Sauce Ingredients in small bow, mix well and set aside.
Tofu Scramble
Place tofu on plate or pan.
Use fork to break it up into chunks (you will break it up even more in the pan so it doesn't have to be perfect) and set aside.
Bring large cast iron skillet to medium high heat.
Add olive oil and swirl to coat the pan.
Add garlic and let cook until fragrant, about 1 minute.
Add onion and allow to cook down, about 1-2 minutes.
Turn heat down to medium/medium-low.
Add tofu and move around the pan breaking up any larger tofu chunks until it looks like scrambled eggs.
Add salt, pepper and turmeric; mix well to combine.
Taste and add any additional seasoning, as desired.
Make Breakfast Burrito
Take tortilla and place Creamy Siracha Sauce, tofu scramble, back beans, spinach and avocado in the center.
Fold in both sides, take the end of the tortilla closest to you and wrap over the ingredients (away from you) tucking in any stray ingredients. Continue rolling away from you until you have a burrito!
Continue in the same fashion until all your burritos are made.

Servings: the number of servings depends upon how big your burritos are! If you use large tortillas it will make 3-4 burritos. Of course, if you use smaller tortillas you will end up with 6-8 burritos.
Additional Add-Ins: you could add roasted potatoes, sautéed bell peppers or even some quinoa!
