Our Melon Mint Caprese Salad recipe is a bright and vibrant summer salad that is fresh and delicious!
Ingredients
1cantaloupecut in half & remove seeds
1cupmozzarella balls
1cuppomegranate seeds
½cupfresh mint leaves
4slicesprosciuttotightly rolled up and cut in half
Instructions
Scoop Cantaloupe: Using a small scoop, scoop out balls of cantaloupe and place in a medium-sized mixing bowl.
Combine: In the same medium bowl, add 1 cup mozzarella balls, 1 cup pomegranate seeds and ½ cup fresh mint leaves; toss gently.
Serve: Enjoy in either a serving bowl or in the hallowed out cantaloupe halves. Garnish with prosciutto.
Notes
Make Ahead of Time: Feel free to prep the pieces of this salad ahead of time and store each in a separate airtight container. Wait to mix until serving.
