Our Melon Mint Caprese Salad recipe is a bright and vibrant summer salad that is fresh and delicious!
Ingredients
1ripe cantaloupecut in half & remove seeds
4slicesprosciuttotightly rolled up and cut in half
1/2cupfresh mint leaves
1cupsmall mozzarella balls
1cuppomegranate seeds
Instructions
Using small scoop, scoop out balls of cantaloupe and place in a medium-sized mixing bowl.
In the same medium bowl, add mint leaves, mozzarella and pomegranate seeds; toss gently.
Serve in either a serving bowl or in the hallowed out cantaloupe halves.
Garnish with prosciutto.
Notes
Make Ahead of Time: Feel free to prep the pieces of this salad ahead of time and store each in a separate airtight container. Wait to mix until serving.
