Goat Cheese Omelette - a simple and delicious recipe for a goat cheese omelette! Such a delicious breakfast and fun way to use goat cheese!
Ingredients
3egg whites
2tablespoonsfresh spinachchopped
½cupcherry tomatoeshalved
1.3ouncessoft goat cheese
kosher salt and ground black pepper
Instructions
Egg Mixture: In small bowl, add 3 egg whites and 2 tablespoons fresh spinach; mix. Add egg white mixture to omelette pan on medium heat.
Prep Tomatoes: Turn on broiler on high and place halved tomatoes on a sheet pan lined with aluminum foil - don't put in oven yet.
Flip Omelette: Use spatula to gently slide under the omelette on all sides as it starts to cook. Continue working the spatula under the omelette, ensuring it isn't sticking. Once omelette is fully cooked on the side that is down, carefully use a spatula (or two) to quickly flip it over.
Broil: Put tomatoes in the oven for approx. 3 minutes or until tomatoes are starting to sizzle. Remove tomatoes from the oven.
Add Cheese: Using your hands, place chunks of goat cheese over one half of the omelette. Fold other side of omelette over the other and let goat cheese melt.
Serve: Plate omelette and sprinkle with kosher salt and ground black pepper. Serve tomatoes on top of omelette.
