Cook Tortellini: cook tortellini according to package instructions. Drain and rinse with cold water.
Combine + Toss: add tortellini, feta cheese, red onion, cucumber, cherry tomatoes, bell pepper, artichokes and kalamata olives to a large bowl. Add dressing and toss to combine.
Taste + Adjust: Taste and add any additional dressing, as-needed, as well as any salt and pepper you desire. Feel free to garnish with a bit of fresh chopped parsley.
Notes
*Red Onion: you can also just dice about 1/4 cup - 1/3 cup, if you prefer.
Extra Dressing: make sure you have a little extra dressing on hand as the pasta will soak it up as it sits. If you make this ahead you will need to add a little extra and toss before serving to freshen it up.
