A light and delicious Greek Yogurt Parfait recipe that is perfect for breakfast, snack or even a healthier dessert!
Ingredients
1cupfull fat plain Greek yogurt
1teaspoonfresh lemon zest
1tablespoonfresh lemon juice
1tablespoonhoneymore to taste
2graham crackerscrushed (regular or gluten-free)
1tablespoonbuttermelted (sub plant-based butter)
1/3cupfresh blueberries and/or blackberries
Instructions
Yogurt Mixture: In a small bowl, combine 1 cup Greek yogurt, 1 teaspoon lemon zest, 1 tablespoon lemon juice and 1 tablespoon honey. Stir to combine. Taste and add additional honey, as desired. Set aside.
Make Crust: In another small bowl, combine 2 crushed graham crackers and 1 tablespoon melted butter.
Assemble: Divide the graham cracker mixture between two small glass cups. Compact a bit to create a bit of a "crust." Top with Greek yogurt mixture and then top with fresh blueberries. Drizzle with additional honey, if desired.
Notes
Gluten-Free: use gluten-free graham crackers to keep this recipe gluten-free.
Dairy-Free: use a dairy-free alternative yogurt and plant-based butter.
Make Ahead: feel free to make the Greek yogurt mixture ahead of time (day ahead) and store in an airtight container in the refrigerator. I wouldn't recommend making the graham cracker mixture ahead of time as it may get soggy.
