Grilled Potatoes in Foil - this grilled potato recipe is buttery and delicious and is the perfect side dish for any meal! So easy!

Ingredients
4-6cupsYukon gold potatoescut into bite-sized pieces
1tablespoonolive oilsub avocado oil
2teaspoonskosher salt
½teaspoonground black pepper
2-3tablespoonsgheesub butter
Instructions
Prep: Ensure grill grates are clean and preheat grill to 400℉. Create a foil "boat" that is large enough to fit all of your potatoes.
Season Potatoes: Spray the foil with oil or your preferred nonstick cooking spray. Place potatoes in the foil boat and drizzle with 1 tablespoon olive oil. Toss to coat. Sprinkle with 2 teaspoons kosher salt and ½ teaspoon ground black pepper and top with 2-3 tablespoons ghee (or butter).
Seal Foil Packet: Place another piece of foil on top and then pinch the edges to fully seal in the potatoes.
Grill: Place on the grill (direct heat) for 15-20 minutes. Remove from grill and carefully open (steam will come out so be careful).
Serve: Enjoy immediately!
Notes
Paleo/Whole30: ensure you use ghee if you are concerned with paleo/Whole30.
Variations: feel free to mix up spices you use. Options that would be good: Italian seasoning, fresh thyme, cracked red pepper, etc.
Cook Time: depending on how thick you cut your potato cubes your cooking time might vary. We made them fairly small and it took them about 15-20 mins.
Leftovers: cooked potatoes can be stored in the fridge up to 4 days and in the freezer for 1 year.
Yukon Gold Potatoes: these are a personal favorite but feel free to use any potato that's your favorite!
Add-Ins: as mentioned before there are so many different herbs and spices you could toss in with these potatoes - onions and/or garlic would also be amazing!
