Our quick and easy Grilled Vegetable Skewers are a simple, healthy side dish that is perfect for cooking outside!
Equipment
6-8 Wooden Skewers
Ingredients
3cupsbroccoli florets
1large red onioncut into quarters with layers separated
1packagewhole portabella mushroomscleaned and cut in half
¼cupTuscan Herb-infused olive oil
kosher salt
Instructions
Prep: Heat grill to 500℉ and clean the grill grates, if needed.
Skewer Veggies: Take a wooden skewer and push a broccoli floret through the thickest part. Go slowly otherwise you might crack the stalk in half completely. Then add a piece of onion - take two layers of a quartered onion and push pointed end of skewer through it. Now add the halved mushroom. Repeat this process until you have filled up all of your skewers.
Grill: Place skewers directly on grill and brush with olive oil and lightly sprinkle with kosher salt. Close grill and let cook for approx. 2 minutes. Flip over skewers and brush with additional olive oil and salt. Close grill for an additional 2 minutes or until broccoli is starting to char nicely.
