Our delicious Taco Bowl recipe is an easy weeknight dinner that is full of all the best flavors all in one rice bowl!
Ingredients
Avocado Lime Ranch Dressing:
3/4cupplain Greek yogurt
1/4cupmayo
1/4cupfresh cilantro
1/2small avocadocut into chunks
1tablespoonlime juice
zest of 1 lime
2teaspoonsred wine vinegar
1teaspoongarlicminced
1teaspoondijon mustard
1teaspoononion powder
1/2teaspoongarlic powder
1/2teaspoonkosher saltmore to taste
1/8teaspoonground black pepper
Rice Bowl:
1tablespoonextra virgin olive oil
1/2sweet yellow oniondiced
1poundground beef
1packettaco seasoning*
4cupscooked rice
1can of black beansdrained & rinsed
Toppings:
cherry tomatoescut in half
shredded Colby cheese
red onionsliced
sour cream
guacamole
fresh cilantrochopped
lime wedges
Instructions
Make Dressing: Put all of the Avocado Lime Ranch Dressing ingredients in a food processor or blender. Blend on high for 1-2 minutes or until smooth. Set aside.
Taco Meat: Bring a large cast iron skillet to a medium-high heat, add 1 tablespoon extra virgin olive oil to coat the bottom of the pan, and sauté the onion until soft and transluscent. Add 1 pound ground beef, break apart and move around the hot pan until fully browned. Add 1 packet taco seasoning* and mix to combine.
Build Bowls & Serve: Divide the cooked rice, taco meat, and canned beans evenly between bowls. Add your desired toppings on top of each bowl and enjoy with the Avocado Lime Ranch Dressing!
Notes
*Taco Seasoning: option to easily make homemade taco seasoning or pick-up a store-bought version at your local grocery store.
Dairy-Free: simply use a dairy-free yogurt alternative in the dressing, dairy-free sour cream, and omit the cheese or use a dairy-free alternative.
