Boil Potatoes: Bring a large pot of salted water to a boil. Add potatoes and let simmer approx. 10 minutes or until potatoes are soft, but firm. Drain potatoes and return to the same pot (but remove from heat).
Coat the Potatoes: Add 4 tablespoons butter, 2-3 tablespoons fresh rosemary, 2-3 tablespoons fresh thyme, 1 tablespoon Italian seasoning, 1 tablespoon extra virgin olive oil, 1 teaspoon kosher salt, and 1/4 teaspoon ground black pepper. Toss to coat.
Taste: Add any additional salt or Italian seasoning for additional flavor. Add additional olive oil or butter if you feel they are dry.
Serve: Enjoy immediately!
