Kale Tomato Salad - a healthy, easy and delicious summer salad that is light always hits the spot. Made with simple, real ingredients!
Ingredients
Mustard Viniagrette:
½cupextra virgin olive oil
3tablespoonsdijon mustard
2tablespoonsapple cider vinegar
½teaspoonyellow mustard
splashlemon juice
Kale and Tomato Salad:
2cupsfresh kalechopped (tightly packed)
2beefsteak tomatoesdiced
1cucumbersliced
½cupedamameshelled
1tablespoonyellow onionfinely diced
1teaspoonkosher salt
Instructions
Make Vinaigrette: In a small bowl, add ½ cup extra virgin olive oil, 3 tablespoons dijon mustard, 2 tablespoons apple cider vinegar, ½ teaspoon yellow mustard, and a splash lemon juice. Whisk and set aside.
Build Salads: Ensure 2 cups fresh kale are chopped to your liking and divide between two salad bowls. Pour a little vinaigrette on top and massage into kale. Divide tomatoes, cucumber, ½ cup edamame, and diced onion between the bowls.
Serve: Sprinkle with kosher salt and enjoy with the remaining vinaigrette!
