Our decadent and delicious Million Dollar Paleo Christmas Truffles recipe is diary-free, grain-free, paleo, and so fun for the holiday season!
Ingredients
1½cupscreamy almond butter
½cupcocoa powder
½cupcoconut sugar
1tablespoonarrowroot powder
1cupdairy-free chocolate chips
1tablespooncoconut oil
½cuppistachioscrushed
Instructions
Combine: Put 1½ cups creamy almond butter, ½ cup cocoa powder, ½ cup coconut sugar, and 1 tablespoon arrowroot powder in a food processor. Blend until fully combined.
Form: Use a cookie scoop to scoop one tablespoon of the mixture at a time and roll into a ball in your hands. Continue until you have used all of the almond butter mixture.
Freeze: Place them on a large platter or sheet pan and place in the freezer for 10 minutes.
Dip: Melt 1 cup dairy-free chocolate chips and 1 tablespoon coconut oil together in a small bowl. Take balls out of freezer and re-roll in between hands to ensure a smooth surface. Use a fork to place the balls in the melted chocolate one at a time, rolling them around until fully coated. Transfer them to a piece of parchment paper or wax paper.
Top & Serve: As soon as the truffle is set on parchment, sprinkle the top with crushed pistachios.
Notes
Storage: truffles can be stored in an airtight container in the fridge for 1 week or in the freezer for 3 weeks.
