Our Paleo Chocolate Chip Cookies are a sweet treat that's kid-friendly and made with simple, real ingredients!
Ingredients
1/2cup1 stick grass-fed butter, room temperature
1cupcoconut sugar
1teaspoonvanilla extract
1egg
1 1/4cupsuper fine almond flour
1cupcassava flour
1/8teaspoonxanthan gum
3/4teaspoonbaking soda
1/2teaspooncream of tartar
1/2teaspoonarrowroot powder
1/4teaspoonkosher salt
3/4cupdairy-free chocolate chips
Instructions
Prep: Preheat oven to 350 degrees F.
Wet Ingredients: Add softened butter and coconut sugar to a stand mixer using a whisk attachment; beat until well combined. Add vanilla extract and egg; whisk to combine.
Dry Ingredients: In a mixing bowl, combine almond flour, cassava flour, xanthan gum, baking soda, cream of tartar, arrowroot and salt; stir to combine ensuring there are no clumps.
Combine: Using the dough hook attachment on your stand mixer, slowly add in the dry ingredient mixture until it turns to dough. Add chocolate chips and fold into the dough using a spoon or spatula.
Form Cookies: Taking about 2 tablespoons at a time in your hand, roll into a ball. Place on a greased cookie sheet and press down gently to flatten a bit. Ensure cookies are approximately 2 inches part.
Bake: Move pan to the oven to bake on the middle rack, for 8-10 minutes.
Cool + Serve: Let cool and then enjoy or store for later.
Notes
Coconut Sugar: you could sub 1/2 cup brown sugar + 1/2 cup organic cane sugar for 1 cup of coconut sugar.
Almond Flour + Cassava Flour: you could sub 1 1/2 cup gluten-free flour OR 1 1/2 cup whole wheat flour for both the almond and cassava flours.
