Pancake Bites - an easy, delicious pancake bite recipe made with real, simple ingredients and your kids will love them! The perfect addition to any breakfast or brunch menu!
Ingredients
2large ripe bananas
1 ⅓cupsrolled oats
2large eggs
½cupunsweetened almond milk
2tablespoonsreal maple syrup
2 ¼teaspoonsbaking powder
1teaspoonvanilla extract
1teaspoonground cinnamon
½teaspoonkosher salt
Topping Suggestions:
mini chocolate chips
blueberriessmall or chopped
strawberrieschopped
real maple syrup
Instructions
Prep: Preheat oven to 415℉. Spray mini muffin tin with olive oil or your favorite non-stick spray.
Blend: In a high-speed blender, add 2 large ripe bananas, 1 ⅓ cups rolled oats, 2 large eggs, ½ cup unsweetened almond milk, 2 tablespoons real maple syrup, 2 ¼ teaspoons baking powder, 1 teaspoon vanilla extract, 1 teaspoon ground cinnamon and ½ teaspoon kosher salt. Blend until smooth. Pour into greased mini muffin tins filling about 3/4 full.
Add Optional Topping: Top with mini chocolate chips, small blueberries or chopped strawberries.
Bake: Place in oven, middle rack, and let bake 8-10 minutes or until they start to brown a bit around the edges. Remove from oven and let cool slightly. Use a butter knife to help pop them out.
Serve: Enjoy with additional real maple syrup and enjoy!
