Instructions
Brown Beef: Bring large cast iron skillet to medium-high heat. Add 1 pound ground beef and sprinkle with ¼ teaspoon kosher salt and ⅛ teaspoon ground black pepper. Move around pan while it cooks; about 5-7 minutes. Drain excess grease. Remove cooked ground beef from skillet with slotted spoon and transfer to a bowl. Set aside.
Sauté Veggies: Return the skillet to a medium heat and melt 1 tablespoon butter. Add 2 teaspoons garlic and move around pan until aromatic, about 30 seconds. Add onion and diced bell pepper. Move around pan while they cook down a bit, approx. 2-4 minutes. Add 1-2 cups mushrooms and allow them to cook down, approx. 3 minutes.
Sauce: Meanwhile, combine 3-4 tablespoons beef broth, ½ tablespoon cornstarch, 2 teaspoons soy sauce, 1 teaspoon liquid smoke and 1 teaspoon worcestershire sauce in a small bowl; whisk to combine.
Combine: Add ground beef back to the hot pan along with the cornstarch mixture. Move ingredients around the pan while the sauce thickens a bit.
Cheese: Place slices of cheese over top and remove from heat. Cover and let cheese melt a few minutes.
Serve: Use a large spatula transfer some meat mixture covered in cheese to sliced buns and enjoy!
