Sautéed Zucchini Recipe - a simple side dish that goes perfectly with any meal! A healthy, quick and easy side dish!
Ingredients
1tablespoongheesub butter (more, if needed)
1-2small zucchinicut into ½ inch slices and then in half
kosher salt & ground black pepper
Instructions
Heat Pan: Bring a large cast iron skillet to medium-high heat. Add 1 tablespoon ghee and swirl to coat the pan.
Cook: Toss in the zucchini slices in the hot pan and season with kosher salt & ground black pepper. Cook for 2-3 minutes, continuing to move around, or until zucchini is heated through, but still firm.
Adjust: Taste along the way to ensure you don't overcook and for seasoning. Add additional salt and pepper, as desired and additional ghee if pan gets too dry.
Serve: Remove from heat and enjoy immediately!
Notes
Zucchini: using a smaller zucchini is recommended as they tend to get less mushy as they cook.
Storage: we highly recommend enjoying this sautéed zucchini right away, it tends to get pretty mushy in the reheating process.
