These Dumpling Smash Tacos are a spin on the viral smash tacos, but taste just like a dumpling and are served with the BEST sauce!
Ingredients
Dipping Sauce:
½cupsoy saucesub tamari for gluten-free

Cabbage Slaw:
½cupgreen cabbagethinly sliced
½cupmatchstix carrots
¼cupfresh cilantrochopped
¼cupgreen onionssliced
Pork Mixture:
1poundground pork
¼cupgreen onionsminced
1tablespoonfresh cilantrominced
2teaspoonsgarlicminced
1teaspoongarlic chili sauce
½teaspoonkosher salt
⅛teaspoonground black pepper
1tablespoonextra virgin olive oilfor cooking only - do not add to meat mixture
Other Ingredients & Tools:
6street taco tortillas

Instructions
Make Sauce: Put all of the dipping sauce ingredients in a small bowl; whisk to combine. Set aside.
Make Slaw: Put all of the Cabbage Slaw ingredients in a mixing bowl and toss to combine. Set aside.
Make Burger Mixture: Add all of the burger ingredients to a large bowl and mix to combine. Divide the mixture into 6 equal-sized balls and set aside.
Prep Other Ingredients/Tools: Be sure to have the burger balls, parchment squares, and burger press ready to bring out to the Blackstone griddle (or use a large cast iron skillet or a flat-top insert for the grill). The cook time goes super fast, so having everything ready-to-go is a must!
Cook Smash Tacos: Preheat flat top griddle to a medium-high heat. Add 1 tablespoon extra virgin olive oil and spread around the cook top. Place the burger balls on the hot cooktop with a parchment square on top, then use the burger press to flatten the patties as much as you can. This will take about 15-20 seconds per patty. Let sit and cook for 40 seconds. Flip the burgers. Place the tortillas on the cook top next to each patty. Close the lid and let burgers cook for about 1-2 minutes. Open lid and flip tortillas over on the griddle. Use a large spatula to lift each patty and place one on top of a toasted tortilla. Transfer to a plate.
Assemble: Divide the cabbage slaw between the 6 smash tacos.
Serve: Enjoy right away with a small dish of the dipping sauce!
Notes
Gluten-Free: use tamari instead of soy sauce and use gluten-free tortillas.
Meal Prep: option to make the sauce, slaw, and burger balls ahead of time. Store each in a separate airtight container in the fridge for a super fast cooking dinner that will take less than 10 minutes!
