Our delicious and fun S'mores Rice Krispie Treats are the perfect dessert for serving a crowd all summer long!
Ingredients
12tablespoonsbutterregular or plant-based
3/4cupsweetened condensed milkreg. or dairy-free
2teaspoonsvanilla extract
16ozmini marshmallowsdivided
9cupsRice Krispies cereal
1cupchocolate barsapprox. (4 1.55oz bars total), cut into chunks (plus more for on top)
9graham cracker sheetsbroken into pieces (1 pack or sleeve from the box)
Instructions
Melt: Bring a large pot to a medium-high heat and add butter to melt. Once melted, mix in the 3/4 cup sweetened condensed milk and 2 teaspoons vanilla extract. Add 13 ounces of mini marshmallows and mix until fully melted.
Rice Krispies: Remove the pot from the heat and mix in the 9 cups of Rice Krispies.
Add-Ins: Now add the remaining 3 ounces of mini marshmallows, 1 cup of chocolate chunks, and broken apart graham crackers to the pot. Give it all a mix to combine (don't over mix or the chocolate will melt too much - just a quick stir to combine).
Bars: Now pour the mixture into a 9x13 baking pan and press down with a piece of parchment paper or wax paper. Once it has cooled a bit, option to press some additional pieces of chocolate and graham crackers in the top to make them a little more visible.
Cool + Serve: Let the pan cool completely, cut, and serve!
Notes
Dairy-Free: feel free to use a dairy-free chocolate bar or chocolate chunks and a dairy-free sweetened condensed milk.
Cool: Since these are extra gooey rice krispies so you may need to let them sit in the pan for a while before serving.
Storage: cover the pan and keep at room temperature for 4-5 days. We made them extra gooey so that they wouldn't try out too easily. Nobody likes a dry rice krispie bar.
