Spanish Chorizo and Leek Stuffed Pea Pods - a delicious appetizer that is packed with flavor and perfect for a crowd!
Ingredients
1teaspoonbutter
1teaspoonolive oil
1tablespoonleekminced
2tablespoonsSpanish chorizominced
pinchkosher salt and ground black pepper
6fresh pea podscarefully take paring knife and split open each pea
6leek slices¼ inch thick
Instructions
Sauté: Melt 1 teaspoon butter and add 1 teaspoon olive oil to small skillet on medium heat. Add minced leeks and move around skillet for about 2-3 minutes or until start to become translucent.
Add Chorizo: Add 2 tablespoons Spanish chorizo and a pinch kosher salt and ground black pepper. Continue cooking moving around skillet for an additional 2-3 minutes.
Fill Pea Pods: Take 6 fresh pea pods one at a time and add a very small spoonful of the chorizo mixture to each pod. Plate 6 leek slices on a plate and lean full pea pods up against to keep from falling.
Serve: Enjoy as an appetizer, salad course, or small plate!
