Sweet Potato Mash - a simple and delicious side dish that is easy enough for a busy weeknight dinner or add it to any holiday meals!
Ingredients
3poundssweet potatoesroughly 3 medium-sized sweet potatoes, cut into medium-sized chunks
¾cupunsweetened almond milk
¼cupreal maple syrup
4tablespoonsgheesub butter or plant-based butter
½tablespoonground cinnamon
½teaspoonkosher salt
Instructions
Boil Potatoes: Bring a large saucepan or stock pot of water to boil. Add cut-up sweet potatoes and allow to boil/simmer for 15 minutes or until very soft. Once potatoes are soft, drain in a colander, and place the potatoes in a large bowl.
Combine: Add ¾ cup unsweetened almond milk, ¼ cup real maple syrup, 4 tablespoons ghee, ½ tablespoon ground cinnamon and ½ teaspoon kosher salt to the bowl. Using a hand mixer, combine ingredients on medium speed until potatoes are smooth.
Adjust: Taste and add additional maple syrup, as desired.
Serve: Enjoy immediately!
Notes
Peeled potatoes: Feel free to peel your potatoes or leave the skin on, whatever you prefer.
Hand mixer: we love the smooth texture the hand mixer provides, but you can also use a potato masher or toss them in the bowl of a stand mixer.
