This healthy bolognese sauce is Whole30, Dairy-Free, Gluten-Free and Paleo!! The perfect way to use your fresh summer tomatoes!
Ingredients
1teaspoonextra virgin olive oil
3-4clovesgarlicdiced
3ouncespancettachopped
1small sweet yellow oniondiced
1large carrotdiced
1celery stalkdiced
1poundground pork
1poundground beef80/20 or 85/15
28ounceswhole tomatoes
8ouncestomato sauce
3ouncestomato paste
¼cupfresh basilchopped
¼cupfresh oreganosmashed
1-2cupssmall mushroomssliced
kosher saltto taste
zucchini noodlesas much or as little as you want
gheesub olive oil
Instructions
Sauté: In a dutch oven, add 1 teaspoon extra virgin olive oil and 3-4 cloves garlic. Stirring constantly, allow garlic to start to cook or until it start to become fragrant. Add 3 ounces pancetta and let fat render. Add diced onion, carrots and celery. Stir and let onions cook down until almost transparent, about 5-6 minutes.
Brown Meat: Add 1 pound ground pork and 1 pound ground beef and ensure pot is over medium-high heat. Break apart and stir until meat is fully cooked. You may pour out some grease, but ensure there is about ¼ cup left in the pan.
Add Tomatoes: Add 28 ounces whole tomatoes and cut into quarters in the pan. Add 8 ounces tomato sauce and 3 ounces tomato paste. Stir to combine.
Simmer: Add ¼ cup fresh basil and ¼ cup fresh oregano. Let simmer 10 minutes. Taste and add additional basil and/or oregano to taste as well as salt.
Mushrooms: Add 1-2 cups small mushrooms and stir. Let simmer on low at least an additional 10 minutes or longer.
Warm Zoodles: Take a large skillet and add a drizzle of olive oil or a little scoop of ghee. Add zucchini noodles and stir on medium heat for 3-5 minutes.
Serve: Enjoy sauce over zucchini noodles. Garnish with fresh basil or oregano.
