Instructions
Prep: Preheat oven to 400℉. Prepare a parchment-lined baking sheet and set aside.
Add Toppings: Slice 1 zucchini and place on the baking sheet. Add a dollop of pizza sauce on each (about a ½ tablespoon). Top each piece with shredded cheese of your choice (regular or dairy-free) and any other toppings you want.
Bake: Place in the oven (middle rack) and let bake 5 minutes, or until the cheese is melting.
Serve: Remove and let cool slightly. Serve and enjoy!
Notes
Size of zucchini - the size (width) you use doesn't really matter so much, but if you can find wider ones you can easily fit more toppings on them (like pepperoni, etc.)
Servings: this is really a flexible recipe and every zucchini is a different size so use this as a little guide to making your own zucchini pizza bites just the way you want!
Toppings: feel free to use more toppings than just cheese - if you have wider zucchini then it will be easier to fit more on them.
