Description

Our Caramelized Grapefruit + Basil and Honey is the perfect use of those in-season grapefruits! A light and refreshing option for breakfast!


Ingredients

  • 2 fresh grapefruit
  • 1 tablespoon coconut sugar (or regular granulated sugar)
  • 45 basil leaves, chopped
  • topping: a drizzle of honey
  • option for serving: greek yogurt (sub dairy-free yogurt)

Instructions

  1. Cut each grapefruit in half. Place on a baking sheet and sprinkle each half with about a 1 teaspoon of sugar.
  2. Broil on high for 3-5 minutes – you will want to watch it carefully as it is a fine line between caramelizing and burning. Remove from oven when sugar starts to brown.
  3. Two options for serving:
    1. Leave in rind and cut around sections with knife for easy access. Drizzle with honey and sprinkle each grapefruit with about 1 leaf worth of basil. Serve immediately.
    2. Remove grapefruit sections from rind. Place in a small bowl, add about 1/2 cup greek yogurt, and about 1 teaspoon worth of basil – drizzle with honey.
