Our Chocolate Chip Baked Oatmeal Cups recipe is made with simple, real ingredients and are going to be your new favorite!

Wet Ingredients:
- 2 ripe bananas, peeled
- 1/4 cup creamy peanut butter (or almond butter)
- 1/4 cup unsweetened almond milk
- 2 teaspoons pure maple syrup
- 1/3 cup unsweetened applesauce
- 1/2 teaspoon vanilla extract
Dry Ingredients
- 2 1/2 cups rolled oats
- 1/2 teaspoon kosher salt
- 1 tablespoons ground flax meal
- 1 tablespoon chia seeds
- 1 teaspoon baking powder
- 1/2 cup dairy-free chocolate chips
Instructions
- Preheat oven to 350 degrees F.
- In a large bowl, add banana and mash with a fork. Add remaining Wet Ingredients and mix to combine.
- In a medium mixing bowl, combine Dry Ingredients; stir to combine.
- Pour dry ingredients into the wet ingredients and stir.
- Spray a muffin tin with your choice of nonstick spray to prevent sticking.
- Scoop approximately 3 tablespoons of the oatmeal mixture into each muffin tin (it’s okay to fill to the top, they don’t rise).
- Place in preheated oven on the middle rack and bake for 18 minutes.
- Remove and let cool at room temperature, about 10 minutes.
- Use a small spatula or butter knife to loosen outer edges before removing.
Notes
- Does it rise: these did not rise at all so you can fill your muffin tins to the top.
- Muffin Pan: option to use these silicone muffin holders, if you want!
- Let Cool: Be sure you let them cool before trying to get them out of the muffin tin!
- Storage: These don’t have any preservatives in them, so make sure you store them in an airtight container in the refrigerator for up to 5-6 days. Feel free to re-heat before serving!
